It's means they are using psychology / reverse psychology, to force the hand of the opponent, into doing something rash.

when the coaches play mind games it means one is doing something to try pushing pressure on the other like making subtle comments in the post-match interview or talk to the press about one of the players of the target team, especially saying they are interested a player (ex. Ashley Cole and Mourinho). It usually demoralizes the players and somewhat changes their focus. Gives them something to worry about.
Its a tactic that I haven't seen employed better by any other person apart from Jose Mourinho of course. He not only plays these mind games with the coaches and players of his competitive clubs (the 'big four') but he also does it with his own players as well.

meaning they are doing things to get you thinking negatively like saying one thing and doing something else.

like telling an employee to be at work on Saturday at 10am but then never showing up to unlock the doors so the employee is just sitting there waiting, then the next day at work denying that it ever happened or yelling at the employee in front of others that you got to the office at 9am and they weren't there

that is a mind game where the employee thinks 'I can never win'
