I have never met anyone who was offended by this, and if I do, I will probably laugh, and not say sorry

I try to decide what I say based on the person I'm saying it to.
To Christians, I generally say merry Christmas, (though sometimes I'll do the happy holidays to include New Years).
When I'm not sure, I say happy holidays, as there are a lot of Jewish people, and others who are either different religions or no religion at all who don't celebrate Christmas.
I think it's just polite.

I usually say Merry Christmas, because most of the people I encounter are Christians. If I was speaking to a Jewish person, I would say Happy Hanuka.

I'll be saying "Happy Holidays" from Thanksgiving thru New Years... I'll say "Merry Christmas" ON Christmas Eve and Day.
For those who will whine and say, "But it's the CHRISTMAS season !! How can you ?? What are you... Jewish?"
Yes I am... I'm also a Reagan-Republican and have been since my 18th birthday in the early 80's.
So PLEASE take a moment to remember that "holiday" is derived from "HOLY day"... so I'm wishing you Happiness on ALL the Holidays that occur in December... from Advent thru St. Stephens Day. I'll save my calls of "Merry Christmas" (Christ's MASS) for the day of his birth (observed).
"Christmas" itself is been fairly well proved to be the wrong SEASON for the actual birth of Christ (someone else do the proving research please !), and was moved to December to become a Holy-day fitting with the pagan winter-festivals. The ANCIENT Catholic Church's fine co-opting work on display.
I will chose to avoid ALL comment on "Kwanzaa"... a derived festival of The mid-20th Century to promote racial division.

I say Merry Christmas because December 25 was Jesus Christ's birthday.
People go buy lots of presents and stuff for Christmas but they forget WHY they buy the presesnts. They buy the presents to celebrate Jesus's Birthday!
