I know the perfect place for you to go; La Rochelle.
It's a rater Small town (80.000 inhabitants) on the west coast of France. I, myself lived her for 4 years, studying to become a chef.
La Rochelle is really beautiful, especially in the summer, with a big port and nice beaches. You find a lot of good restaurants here. Some of the best are; Richard Coutanceau, Les Flots, Les Comptoir de Voyage, L'Annexe and Le Food and bar. They say that there are so many restaurants in La Rochelle, that you can go do a different one every day of the year :)
There is an airport in La Rochelle, with daily flights to Paris and London.
I really love this city and I'm sure you will too!

I suggest : Lyon.
Big city, but hostelling is far cheaper than in Paris. Lyon is a beautiful city, in the middle of France : so you're not far from South of France, not far from the Alpes and Mont Blanc, not far from Italy, etc...
In Lyon you can discover France through different ages : there's a whole district that was built in Middle Age and it's still just as it was in Middle Age (Vieux LYon). There are a lot of ruins from Gallo-Romain time, like antic theaters...
The hill of Croix Rousse is a XVIII century district, and the Presqu'Ile is all from Belle Epoque (beginning of XX century).
There's an international airport in Lyons.
I'm affraid that people and salespersons in Lyons would be as unpolite as in Paris, and they dont speak english a lot... But there are still some French persons like me very fond of USA and very willy to help lost tourists !!!

Hi !
if you like good cooking, nice castels, markets, beautiful countryside, you should go to Dordogne, many English people go there for the quality of life (although maybe you are not looking for English people!)
there'r might have an airport ;) ! but there are many other ways to go there...
there are also Bretagne (if you are not scared of rainy days), Vendée (I live there), Limousin, Corrèze...
I would say that each region is attractive according to what you are looking for (but you must know that...)

stay in superb. there is not any longer something to do in Cannes that's super for French ppl from huge cities getting faraway from all of it. For an American, Canadian, etc., maximum human beings wanna see shops, museums, old homes, etc. you will bypass to the sea coast in superb.

you could try the south, the french riviera (nice, cannes, monaco, st tropez)
or the north west side of Bretagne (deauville, trouville, le havre)
Or obviously the capital if you've never been there.
