I think it happened sometime between the end of Season 2 and beginning of Season 3. She had already moved out when the season began. I think Pam broke it off because she was confused about Jim and also because she found herself in a boring rut with Roy and it scared her.

Pam was sick of Roy's attitude towards their relationship and that they took so long to get engaged. I think she also has feelings for Jim.

It was in the 1st episode season 3 "gay witch hunt"
