Well I really depends on what your into and how much anime you've already watched. For instance if you have just recently taken a interest in anime I suggest starting with a decent action shonen like Naruto, Full Metal Alchemist, One Piece or BLEACH (Japanese version for One Piece). Another good starting option would be some good shoujo comedies like Fruits Basket, Azumanga Daioh, Cardcaptor Sakura, Paradise Kiss.
However, if you are a more seasoned fan you may have a taste for more mature (content wise) animes like Neon Genesis Evangelion*, Tenjou Tenge, Chobits, Elfen Lied, Ghost in the Shell SOC*, Great Teacher Onizuka *, Basilisk: The Kouga Ninja Scrolls, Mononoke-Hime *.
The thing with anime is that lame shows are never very popular among fans so join an anime forum and see what one are popular there :-)

EDIT: cartman forgets, South Park also produced the #1 anime of all time.
1- Good Times With Weapons. By Trey Parker and Matt Stone. This South Park episode which was designed in anime format and anime style drawings was originally made as a parody of anime, however it ironically ended up being the best anime there is.
2- Golgo 13 the professional and queen bee (sequel)

American shows like South Park, Simpsons, Family Guy are great stuff, but they aren't anime so Cartman's answer is wacky. It's like asking what the best notebook computer is and someone saying "a PS3"....

1. GTO- a very interesting anime about an ex-biker gang leader who wants to become the Greatest Teacher in Japan
2. Naruto - well, everone loves Naruto
3. Jigoku Shoujo/ Hell Girl/ Girl from Hell - another interesting anime about revenge. First time I watched this, there's this weird dark aura all over it
4. Slam Dunk - this anime's quite old now but it's still funny! About a delinquent who wants to be the #1 basketball player in Japan!
5. School Rumble -another very funny anime about students and their ridiculous stories about their crushes.

well it really depends on your taste. i mean if you like comedy, i recommend ouran high school host club, one other the newer released animes that is actually good. If you like detective-ish physcological things, death note is definitely one to watch. of course anime such as fulmetal alchemist, naruto and bleach etc. can probably entertain most as well. Classics such as astroboy, neon gensis evalanche(sp?) are good to watch as well. really, it depends on ur tastes.
