First you'll need to have a place and time to play. I assume you have a table at work already? You can't do it during work hours so perhaps people could fit some time in at their lunch hour. I'd suggest a double elimination format, if people really just want to play some ping pong that would give everyone at least two matches. If people really want to play a lot set up a round robin, this is s format in which everyone plays everyone else. If there is a wide disparity in talent set up a ladder tournament, this puts the best players on top, weakest players on bottom and people challenge up to move up the ladder, usually you only challenge perhaps 3 spots up the ladder, challenged players must accept. Ladders are good for up to about 20 players for more than that you could do a pyramid tournament, which works exactly the same as a ladder but puts the top player at the peak, the next couple down bit, the next 4 or 5 under him and so forth. Again you challenge players 2 or 3 spots ahead of you and if you win you switch places.
