How to create Colored Pasta?

You need:
# 1/4 cup of rubbing alcohol
# 1 table spoon of food coloring of your choice
# 2 cups of pasta of your choice
# 1 quart zip lock freezer bag
# large paper grocery bags.

Directions:
Pour alcohol and food coloring in a ziplock freezerbag. Zip it and shake around to mix. Open it and put in the pasta. Make sure the bag is zipped. turn the bag over and over on the table to evenly coat the pasta. Leave it on the table for about an hour. Turn it over after 30 minutes to evenly coat it. Pour it out onto the paper bags. Let it dry over night.

Children can do this for you. Just put the alcohol into the bags ahead of time. Provide 1 cup measuring cups and measuring spoons. Let the children choose the color and the pasta to put in their bags. Make sure all bags or closed good. An adult can pour the pasta out to dry.

The pasta can be used to make pictures in the art area.A variety of pasta can be used.

What do you mean change color. The pasta is one color and then you add sauce it changes color? That can be done by adding red cabbage juice to the pasta dough. When the pH changes, the color of the red cabbage changes .
If you are talking about how they make pasta of different colors.
add this to the pasta dough.
green - juice from watercress or spinach
red/purple- beet juice
orange - carrot juice
black- squid ink

Pasta is made from flour, made from a variety of hard wheat called durum, and eggs. They mix in natural colourings: spinach for green pasta, tomato for the red, and squid ink for the black. Then it's rolled out, or pushed through a machine which cuts it into shapes, and dried.

Or it could be like apples, or pears; you know, different tree varieties produce different fruit. (Don't write that)

They use vegetables not food coloring to change the color of the pasta. for example red pasta they use tomato, green pasta they use spinach or basil etc..... they take the semolina flour mix in the eggs and add their veggies (probably steamed) right into the dough and roll and cut into desired shaped.

I used to live in Italy and once came across a sweet brown pasta made with chocolate, it was served as a dessert with warm Nutella sauce, bananas optional, and was a chocoholics dream!

The question is why do they do it? Do you really think the colored pasta tastes any different from the plain kind. I don't. Must be just for looks. Just what we need, some more chemicals in our food.
