MC = master of ceremonies (a.k.a. emcee).
That's according to Webster's. In the hip-hop dictionary, it can also mean "Microphone Controller", "Mic Checka", or "Music Commentator".
A Tribe Called Quest had a liner note on one of their albums that read something like, "MC' means 'Master of Ceremonies' and a lot of MCs don't know what it means."

An MC is a Master of Ceremonies.
That's the host of a show, event, or something else of that nature. Bob Barker is an MC (also written as emcee) on The Price Is Right.
Rappers adopted this term because you'll notice that only 1 or 2 of the guys really does the rapping (because they can't sing), while the other guys do something else like dance, scratch records, or try to look otherwise indifferent.
When rap started, the other guys used to chime in on the words that rhymed. That really is old school.

As stated many times before MC stands for Master of Ceremonies and is often spelled out as emcee. MC's are prevalent in the hip hop culture, but not exclusively tied to it. For example Jerry Lewis is the emcee for the Muscular Dystrophy telethon on TV... for rock and roll concerts anyone who comes up on stage and chatters between bands would be considered an emcee... many times a radio station will get involved in local events and have one of the radio personalities show up with prizes and have them jabber on a microphone and be the emcee for the event.
