The most ancient manuscripts are related to the various books of the Bible. They are written in many ancient languages - Greek, Sumerian, Aramaic,etc .
We have many of these ancient writings, and more were discovered in contemporary times, such as the Dead Sea Scrolls discovered in the 1948-50's.

I have to disagree very strongly with the answer suggesting the Bible - this was not codified and written down until the 4th century, following the Council of Nicea. The greatest manuscript evidence is for Roman and Greek literature. Interestingly enough, much of this was retained because the scribe monks of the early mediaeval period used the materials it was written on to copy out bibles etc
