Try the following three, all from the same trilogy by Traci Harding:
The Ancient Future
An Echo in Time
Masters of Reality
I really love these books, and I seem to have a similar taste to you. They truly are fantastice, and some nights I would read them, literally, all night! (and sleep all the next day), but they really are unputdownable.

Judging from the books you've said you like, I'd recommend "Justin Thyme". Like Harry Potter and the Dark Materials series, it's aimed at kids but has a cross-over adult appeal too, (at least, for those who enjoy the likes of Pullman or Rowling). It's part science fiction part fantasy ... sort of science-fantasy, (the chapters are interspersed with time travel theories). It's a tightly plotted adventure - but also a kind of intriguing whodunit, in that there are clues to find. Well, we enjoyed it anyway; I can honestly say that it's the first time since the last Harry Potter book that the ENTIRE family has shared one book and been equally facsinated by it, from the youngest to the oldest! In fact, we're still "arguing" about some of the hidden clues! Here's a link to it on Amazon

The Artemis Fowl series by Eoin Colfer is pretty good, might be for a younger reader though. The Supernaturalist by the same guy is cool too. Orson Scott Card's Ender's Game is really good, its about this little genius that goes to a space station to be trianed in the art of war (off the back of the book). Orson Card has a bunch of books branching from that.

Anything by Tamora Pierce. Try the Tortall books rather than the Circle books, they're more for teens. They start with a book called "Alanna: The first adventure" in the Lioness Quartet. It's awesome and I've read all of the books at least four times! (Just to mention, because I was confused at first) it's then the Immortals Quartet, The Protector of the Small Quartet, (one book) Trickster's Choice, (Sequal) Trickster's Queen, (New trillogy, just came out last month) Terrier in the Provost's Dog Trillogy. Have fun, and warning, these are addicting!

Neverwhere by Neil Gaiman - a dark fantasy about Dick Mayhew, an ordinary guy who gets trapped in a dark world under London, and his only friend is being hunted by the men who murdered her entire family. He has to figure out who to trust, how to escape, and how to figure out who was behind the murders. More info and reviews at http://www.amazon.com/Neverwhere-Neil-Gaiman/dp/0380789019/sr=1-1/qid=1165007311/ref=pd_bbs_1/102-5811695-0577746?ie=UTF8&s=books
His Majesty's Dragon by Naomi Novik - This is a book about what the Napoleonic wars would have been like if both sides had an air force made up of dragons. It's the story of a naval captain who accidentally acquires a baby dragon and finds himself an unwilling member of the air force. Great characters and plot, and lots of fun. Sorcery and Cecelia by Patricia C Wrede and Carolyn Stevermer - This is a fantasy novel set in the early 1800's in England. It's written in the form of letters between two cousins - one has gone to London for the summer while the other had to stay home in the country. They stumble across several mysteries and plots that are all related, and they have to solve the mysteries (and also help another cousin, who was turned into a tree). If you liked His Dark Materials, you would probably like Eragon and Eldest by Christopher Paolini. I love the books you mentioned but I've never read Twilight. I'll have to read it some time. I also like the Darkover series by Marion Zimmer Bradley. Have fun reading!
