Thousands, possibly tens of thousands or more. One I'd suggest is the Mythologica. It has Roman and Greek and loooots of others but I haven't found another that I like as much. It seems to be the most thorough as well, though I've only ever had small town libraries to search through.

How could anyone possibly answer that?
Thousands. Possibly hundreds of thousands. Ranging from the time of the Greeks until the modern day, possibly millions.
No recommendations really. It's all up to you which book you prefer the best.

How high can you count? Seriously, go to the library and check it out. While you are at it, look for one that appeals to you. That's my best recommendation.
