Valentino's, in the Venetian Hotel. Absolutely the best Italian food I have ever had. The service is impeccable, the food exquisite and the wine list is perfect. It is the one place I make sure i go to every time I go to Vegas. (2-3 times a year).

Here's your answers:
BEST overall - Little Buddha in the Palms:
Little Buddha is a VERY cool place, the decor is a perfect blend of tacky old-fashioned "Chinese restuarant" and modern trendy - I don't know how else to describe it. ALL the food, including the sushi, is very good. The Sushi in particular is good. The best thing is that for a major hotel/casino's restaurant, it is reasonably priced. Not cheap, but not high priced by any means. That's something about the Palms in general - I've eaten in all their restaurants, and they're all very good, and only Alize was priced very high. Even their steakhouse (Ni9e) was priced reasonably for a steakhouse.
If you're a fancy pants name-dropper, there's always Nobu at the Hard Rock Cafe. Nobu is really a restaurant from L.A., that opened another one in NY, and now the one in Vegas. It's very expensive, and quite good. I've eaten at the ones in L.A. and NY as well as the one at the Vegas Hard Rock Casino, and to me the one in the Casino wasn't quite as good (although every bit as expensive) as the other two. But in NY I know I had to wait over 2 hours just to get a table at Nobu Next door which is the non-reservation version of Nobu, because Nobu itself requires that you are a celebrity with a reservation from 3 or more months in advance!!! (OK, exaggeration, but not too far off from the truth)
Now if you can get away from the strip (in other words, if you have a car) here's your best bet:
Saporo Sushi, which is actually in Henderson, right outside of Vegas. It's in a strip mall, but they're very good and less expensive. I loved it!

Another idea - if you're not above eating at a buffet, I believe that MGM has a special buffet with seafood and very good sushi. You might want to call them when you're out there.
One last thing - there are many good Sushi places in various strip malls/shopping centers throughout Vegas, and there are several stand alone ones that are good, so if you don't care for the flash of a casino hotel and want to save a little money, try any of these, I've never had really BAD sushi in Vegas. I remember one place (but not the name) which was all by itself up on Sahara Rd just west of the strip.
My advice, is either hit Saporo or, if you want the whole Vegas thing or you're stuck to the strip area, go with Little Buddha, from which you can then go to the Ghost Bar at the top of the Palms, for drinks - it's a GREAT bar with an outdoor terrace and one of the best views of the strip (especially at night!). Like I said, any restaurant in the Palms is going to be very good and a good value.

Spago in Cesar's Palace is very good. Don't go to Aureole in Mandalay Bay. The website said the food was $35 a plate. We get the bill and it was $75 a plate. Also no menu prices. Not very good for how expensive it was. The service was really bad too. The wine tower was pretty impressive though.

Mandalay Bay has good food. So does the bilagio. Go to places that are not as fancy. I asked someone where the ice cream place was and they asked me what I wanted I told them a salad. They sent me to a snack place in the Bilagio and it had a salmon sandwitch. You can eat cheaper if you try places that have a less expensive atomosphere.

For Mexican - I like the Pink Taco at the Hard Rock
Steak - N9Ne at the Palms, Gallaghers at NYNY, AJs at the Hard Rock
There's a sushi/Japanese place at the Wynn that's supposed to be great too. (I don't eat sushi, so I'm not the one to ask about that.)

GO to the ALLADENS and EAT any thing they have on the buffet!!!!!! the breakfast are Awesome!!! we will be there in Dec... WOULD NOT EAT any place else.. YOU got to do the dinner at Alladens!!!!!!!! WOW!!

Conrad's...however it is extremely expensive. There are no prices on any menu items. Plan on at least $100 per person if you plan on drinking.
