I am writing a "fairy tale" for a class project (nothing like writing fairy tales in your fifth year of university!). I need to compare a character to a stupid animal, and my mind is drawing a blank. What animals are commonly considered to be stupid? It would be best if it were an animal known to medieval Europeans.

I don't think that people in medieval times had explored enough of the world to encounter dodo birds, unfortunately!

The only animals that are considered stupid are turkeys. I heard some say that turkeys will drown in a rain storm because they are stupid enough to stand out in the rain and not come in.
I don't know if this is true. Later I heard that just isn't the case. You may want to check it out.
I think Mother Nature had to make animals smart to a certain extent for survival purposes.

Sheep are not the brightest lights in the sky, but I think I remember hearing a story about birds that will look up when it rains and drown (urban legend territory) I thought it was geese.

Turkeys!
The dimwit chicks will hold their mouths open, up to the rain until they drown.
If one changes the position of their water or food, too quickly, they will not eat or drink. Containers must be moved inches at a time.
We all know some "turkeys", don't we?

In old stories donkey were considered to be stupid and stubborn. Sheep are also classically considered dumb, though they don't walk off cliffs or anything.

agreement with the chickens. they are ruled by basic natural needs and are not prone to abstract behaviors, such as a horse, rat, dog, or cat who will come when called.

sheep. If a sheep walks off a cliff to its death an entire flock will follow, one by one, each falling to its death. That's why sheep need a shepard, dog, or goat to guide them.

donkeys, where did you think the term "jack ***" came from. It didn't just refer to jerks. Bulls were stubborn, chickens were afraid. Er, yes, I think one was a donkey.

sheep, geese, ducks, chickens. From personal experience goats are not stupid animals they are very cunning, wily animals. Also from personal experience geese and chickens are very dumb. Very, very dumb.
