Jules--if there is no true Sabbath, then how can we follow the commandent to remember the Sabbath and keep it holy?

In fact Exodus 20 is extremely precise about when the Sabbath is:

8 Remember the sabbath day, to keep it holy.
9 Six days shalt thou labour, and do all thy work:
10 But the seventh day is the sabbath of the LORD thy God: in it thou shalt not do any work, thou, nor thy son, nor thy daughter, thy manservant, nor thy maidservant, nor thy cattle, nor thy stranger that is within thy gates:
11 For in six days the LORD made heaven and earth, the sea, and all that in them is, and rested the seventh day: wherefore the LORD blessed the sabbath day, and hallowed it.

The days of the week weren't originally named Sunday, Monday, Tuesday, ect......the days were given these names to reflect the gods that were worshipped on those days. For example....Sun-day, the Sun god, Mon-day, the Moon god, etc.

The evening and the morning (in that order) were the first day, the evening and the morning the second day, etc.

Darkness was (on the face of the Earth) before light so then the evening being first and looking at the order. The Sabbath is from 1800 on Friday through 1800 Saturday. Making this the Sabbath of the Lord.

As far as christians not observing the sabbath it is not true. Even though the Word tells us that God changes not then the Sabbath can not be broken. Many religions have taught the sabbath is on Sunday. The real question you asked was why was it not observed. Christians that are being real with God do observe the Sabbath. How they observe it is another question. Are they doing those thing that God told them not to do when Moses brought those laws to the children of Israel? They still apply. If someone refutes this by saying that Jesus came to fulfil the law (which is true) why is it then they would observe the Sabbath? It's still one tenth of the 10 Commandments and if one law is broken then according to the Word they are all broken.

Wheather a person observes the Sabbath on Friday to Saturday or on Sunday let them do it according to the Word and honor God by resting.

I don't know the complete answer but I do know that originally Christians and Jews celebrated the sabbath on what we call Saturday and that it split somewhere along the line. There are some Christians who still celebrate it on Saturday called 7th day adventists. Try looking them up they might have a good explanation.

Many of hundreds of years ago there was a huge curfuffle over the calendar year.
Several Roman Emporers argued about who was the greater - Julius, Augustus etc. Each named a month after themselves (July, August) and they also argued over the number of days in the month, and when the week would start. Sunday was eventually settled on as the official 1st day of the week of the Roman calendar. Christians eventually adopted the calendar for whatever reason.

Some of the principles of the Sabbath can be appreciated and lived out by anyone of any faith. While only Christians and Jews will appreciate the aspect of setting aside the day to seek the Lord, anyone can appreciate working their butt off all week and taking a day to simmer down and refresh before starting another week.

Christians don't celebrate the Jewish Sabbath. That doesn't make either right or wrong.

God should be exhaulted at all times. and Sunday was set as the day for worship for Christians because Saturday was a pagan day... because pagans are so bad...
