Some animals will "eat themselves to death" if too much food is left out...?

Could that happen to a human or just some animals?

It is possible to a human to eat themselves to death, although it is not a natural thing to do it has happened! Check out the source I have provided for examples.

Basically if you eat too much your stomach lining will eventually rupture and you will die a horrible and very painful death. Normally you will 'feel full' well before this happens and normal people stop eating.

Like someone else said, horses will eat themselves sick, which can sometimes be fatal. They can't vomit. As far as humans go...
There was an episode of CSI in which a man had a disease that prevented him from feeling full, no matter what he ate. He had to be restrained all the time, otherwise he'd just keep eating and eating. He got loose and went on an eating rampage and asphyxiated himself. His stomach expanded so much that it pushed against his lungs. Of course this was just TV and I have no idea if it's really possible.

Plenty of humans "eat themselves to death" this is the problem with obesity in our country. Most any animal will eat too much if you allow it to have all it wants

I don't think any animal would eat itself to death as it would stop when it was full. I have dogs and I free feed them and they are healthier (weight wise) than many dogs I know that only get fed twice a day. Dogs that have to wait for their breakfast and dinner tend to wolf it down when it is put in front of them. Dogs that are free fed tend to only eat when they are hungry as they have the comfort of knowing that they can eat whenever they want.

Humans eat themselves to obesity...it's rare that someone eats so much they die, although it would be possible I imagine it would be difficult to do...
