I would say take her out for a really nice lunch or dinner. My mom always likes that because she says we never spend enough time together.

I think that a nice collage of family pictures would make her very happy. This will bring back alot of great memories for her and she can tell you stories of each picture you have put in the frame. I did this for my grandmother and she loved it. You will have to take time and go thru pictures and maybe relatives pictures. Your mother will appreciate the thought and time you have put into this gift. As a mother that means alot more than a store bought gift, that I probably already have 1 or 2 of. You know what I mean. Charity gifts. There's several options. Some organizations such as Heifer International (http://www.heifer.org/) or World Vision (http://www.worldvision.org/) have "gift cataloges", where you can choose different things to give to. For example, you could choose to give money to give a needy family farm animals, or some children school supplies, or equip a medical clinic with supplies, etc. After you purchase one of these gifts, the money goes to do good, and your loved one recieves a card from the charity saying what was done in their name.
You could buy something for the person out of the catalouge and have it be a suprise, or give them the cataloge and let them pick something. There's also charity gift certificates (one site I found is http://www.charitygiftcertificates.org/ but unlike Heifer International or World Vision I can't vouch for their quality), which allow you to give people gift certificates, that they can then spend to give money to their favorite charity.
Giving money to charity as a Christmas gift for somebody is a win-win; they get a meaningful gift, and somebody in needs recieves help.

Gift cards if that's cool (for my mother, that's the greatest insult ever though... so no gift cards for her).... that way they can pick out what they want.
Also, a lot of people will appreciate a nice book or movie set, pampering stuff, pj's, perfume.... and so on.

something simple? maybe like a homemade potpourri, or perfume if its a she. Or a gift card to a cool store for guys (Discovery channel store, Sharper Image, Brookstone, or even History Channel online store have interesting stuff). It doesn't necessarily have to be a wrapped gift either. You could take them to a concert or something....

I have an uncle who is single and rich and I always make him a 10 pound lasagna (everything homemade) and put it in one of those plastic but can go in the oven pans.
He loves it.
