You should be able to hack the resource file to make it work.

First open /Applications: iSync.app: (Control-click and choose Show Package Contents): Contents: PlugIns: ApplePhoneConduit.syncdevice: Contents: PlugIns: PhoneModelsSync.phoneplugin: Contents: Resources: MetaClasses.plist file in TextEdit, and add the following XML lines:
com.nokia.E61

Identification

com.apple.cgmi+cgmm
Nokia+Nokia E61
com.apple.gmi+gmm
Nokia+Nokia E61

InheritsFrom

family.com.nokia.serie60v2.3

Services

ServiceName
com.apple.model
ServiceProperties

ModelIcon
NOKNGAGE.tiff
ModelName
E61

Please note the family.com.nokia.serie60v2.3 line in the above code. In that line, the serie60v23 tag is for Symbian 8.1. The E61 device has Symbian 9.1, but that 2.3 is the latest that iSync understands. So, just leave it like that.

Save the file and launch iSync (pair your E61 via Bluetooth firrst), and the E61 will be available for syncing. That's it. I also made a custom E61 image for iSync. That .tiff should go in the same folder as MetaClasses.plist. If you make it for yourself, just name the file NOKE61.tiff and change NOKNGAGE.tiff in the above XML.

I hope this will work for you -- it works just fine on my PowerBook 17", 1Ghz machines -- until Apple updates iSync and adds support for this beautiful device.
