I read online that the Italian actress Simonetta Stefanelli died in Rome this year (July 23) of cancer. I'm having a hard time finding any info on this. There are about 3 websites reporting this and I don't know if they are accurate. Is this true?
(She was the Sicilian girl Al Pacino's character married in The Godfather.)

Yes, Simonetta Stefanelli did really die. She died on July 3, 2006 because of cancer.

Simonetta Stefanelli (November 30, 1954 - July 23, 2006) was an Italian actress who was born in Rome, Italy. Stefanelli is best known outside Italy for her role in The Godfather (1972), in which she plays Apollonia Vitelli-Corleone, Michael Corleone's (played by Al Pacino) wife for a short while before she is killed by a car bomb intended for Michael.
