polk is a plant that grows in the southern united states...comes into season during the summer months...if eaten raw...it makes you deathly ill...so's ya gotta cook it into a "salad"...the stuff smells to high heaven while cooking it,,,and tastes like a mixture of cabbage, garlic and old sneakers!!!...my dad loved (and still loves) his "polk salad"...

It is Polk Salad Annie, and it is by Tony Joe White. Elvis may have also recorded it. The following spoken intro to White's version explains all.

[spoken]
If some of ya'll never been down South too much...
I'm gonna tell you a little bit about this,
So that you'll understand what I'm talking about
Down there we have a plant
That grows out in the woods and the fields,
Looks somethin' like a turnip green.
Everybody calls it Poke salad. Poke salad.
Used to know a girl that lived down there and
she'd go out in the evenings and pick a mess of it...
Carry it home and cook it for supper,
'Cause that's about all they had to eat,
But they did all right.

Poke salad annie...gator's got you're granny...everybody thought it was a shame, cause her momma was working on a chain gang, poke salad annie.
Okay, poke salad is a weed that grows in the wild. It's good to eat but you have to boil it three times to get all the poison out of it. I know, it's scary, but it's really good.
I don't really know the relationship between actual poke salad and the song but I DO know that Elvis was not the first person to sing this song.

Jim T has the words and Elvis said them with music playing before going into the song. I have him on CD or tape singing it at one of his concerts.

The King is missed.
