I use a potato peeler and I go around the spud in circles trying to see how long I can get the peeling to be.

If they are boiled I take it off with my hands. I use the peeler for some and some I scrub real good and just cut them up and serve with the skin on.

I use a small knife that has been passed down for generations. It is well worn and the blade isn't as wide as it used to be but it still peels spuds just fine.
