Otherworld, J-E-N-O-V-A, and One-Winged Angel are all very high on my list. Matoya's Cave makes me think of my childhood playing the original Final Fantasy.
If you go to iTunes and search for Nobuo Uematsu you will find almost every song ever in Final Fantasy

"Otherworld" from FFX. It's the heavier tune at the beginning when Sin attacks the blitzball tournament (and Tidus meets Auron).

I really enjoyed any of the chocobo themes and who doesn't love one winged angel? I also liked the machine faction bg music from ffx-2.

I'm going to kick myself for saying this, but I like 1000 Words from X-2. It's pretty powerful, and I like the meaning to it.

hmmmm, in terms of beauty i would have to say the Celes opera song or the Aeris Theme.
but out of shear cuteness i would have to say Yuffie's theme "decendant of the Shinobi"
Dammnit so much to choose from, the prelude, Liberti Fatility, DONT MAKE ME CHOOSE :D
