I'm trying to get an easement to be able to get to our new house, but the original owner signed over the land to his kids and grandkids. The grandkids are all under 19 and can't legally sign the easement? What can be done?

Any 18 year olds? You said under 19. If they are 18 they can sign. If they are under 19 they can still sign the document but it will be voidable. All you have to do is record a new easement when one of them turns 18.

The above answer is correct. In addition, if you're worried about having a voidable easement, you could petition a court to appoint a guardian ad lietem for the children, and if the guardian consented, it would legally bind the children.
