I recently judged a Jr. High science fair. Some of the fair projects were really creative.
"They color of cool"Can the color of shingles affect the temperature of a house?
"Night Writers" - How does lack sleep affect your motor skills? They had people stay up all night giving them typing test at various points of the night and after things like drinking a cup of coffee.
"The unpopables" - Which brand and/or flavor of popcorn has fewer un popped kernels ?
There were so many that were great. but these are the ones that I remember as the best

For my science fair project, I researched the affects of farting. (no joke). Get 2 3 liter bottles (empty) and fill one with one food, and the other with another. Add a half a cup of soil (for bacteria to form) then put a balloon over the top (no cap). Monitor how big the balloon gets for one week and BAM! A perfect science fair project. Hope I helped!

I did a science fair project, where I took four of the same plants and used the sunlight and a black light. To see if sunlight makes a plant grow better or will a black make them grow better. I know which one makes them grow better. But just do the project and find out.

No volcanos or solar systems think of something fun like ummm a........ robot im sure you can buy a little kit thing well if thats even aloud i just get tired of movies with paper micha volcanos & solar systems..think outside the box.....not much help i know but advice should work to right?

Wallpaper that has mini /or tiny little lites such as smallest x-mas size lights to light up 3-D outstamped areas area s of the wall paper. Like city lit buidings ,Safe of fire ect,, just a new idea

My daughter did one last year that landed her 2nd place in the state regional science fair
"Are Double Stuff Oreos really double stuffed?"
It was really fun to do, and all her teachers were very impressed!

In England we don't do science fairs, so I'll give it my best shot.
How antiacid tablets work - some acid and some milk of magnesia, stick them together and explain. Also demonstrate film canister rockets as they are fun.
