Do you have a special recipe for Christmas Cookies to share?

(Christmas cookies)

1¾ cups sugar
1 cup (2 sticks) good oleo or butter
4 cups flour
2 large eggs
1 level t soda
1 t vanilla
⅓ t salt
1 t butter flavoring

Cream oleo, add sugar and beat until fluffy. Add eggs and beat in. mix in vanilla and butter flavorings. Stir salt and soda into flour. Add flour a little at a time to egg mixture. Dough will be very thick. Can be shaped into rolls, chilled and sliced. For Christmas cookies, roll out on lightly floured surface. Cut desired shapes. Bake on lightly greased cookie sheets at 350° for 10 – 12 minutes or until lightly browned.

White Mountain Icing (Allegretti)

½ cup sugar
¼ cup white karo
2 T water
2 egg whites
1 t vanilla

Boil sugar, karo and water to firm balls stage (242°). Cooks quickly. Beat egg whites until stiff enough to peak. Pour hot syrup slowly over whites while beating. Add vanilla and mix.

Makes nice soft workable icing.

These are great cookies. I got the recipe from a co-worker and I've made them every year since then.

ITALIAN RICOTTA COOKIES

1/2 lb. butter
2 c. sugar
1/2 tsp. salt
1 lb. Ricotta
2 eggs
1 tsp. vanilla
Grated rind of 1 orange
4 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda

Cream butter; add sugar and continue creaming. Add egg and Ricotta and vanilla; beat well. Sift together flour, baking powder and baking soda, salt; add to batter.

Drop about a teaspoon of dough on ungreased baking sheet. Bake at 350 degree oven about 10 minutes until edges are lightly browned. Cool.

FROSTING:

2 c. confectionery sugar
1/4 c. butter
3 tbsp. milk
1/2 tsp. vanilla

Mix well and put on top of cookies and sprinkles.

The best cookie I have ever eaten is the
Seven Layer Cookie
INGREDIENTS:
4 ounces butter
1 1/2 cups graham cracker crumbs
1 (6 oz.) pkg. chocolate chips
1 (6 oz.) pkg. butterscotch chips
1 small can shredded coconut (1 1/3 cups)
1 can (14 ounces) sweetened condensed milk
1 to 1 1/2 cups chopped pecans
PREPARATION:
Preheat oven to 350°. Melt butter in 9x13-inch baking pan. Sprinkle graham cracker crumbs over melted butter; spread crumbs with chocolate chips, then butterscotch chips. Sprinkle coconut over this, then drizzle the sweetened condensed milk evenly over all. Sprinkle with the chopped pecans. Bake for about 25 to 30 minutes. Cool and cut in 1 1/2-inch squares.
I can not eat them any more... I am a diabetic.
