A goat dressed up as Santa. He already has a beard.
Sheep or even smaller goats, with different colored bows, as if they are gift wrapped presents. Pigs, roosters, chickens... they might be harder to handle on a float. If they are going to be fake animals, you could make them wrapped as gifts with their little heads, tails and legs sticking out of the gift boxes

White snow bunnies, brown reindeer, Red cardinal's, gray mice, beaver's, squirrels, bluebirds, a mountain lion, a bear, and lots of pine cones on the ground of snow.
Have them around a Christmas tree with Santa handing out gifts to them. You can have a brightly colored picnic blanket near-by the tree, and animals with popcorn, seeds, nuts, and plants, showing that the animals have shared a Christmas dinner with each other.
This scene will show that during Christmas, there is harmony between different animals, some being dangerous, and predator's of some of the other animals. The animals, representing humans. Good Luck!

a lamb is white
you could get a red rooster or a red hen
or a red calf
a white bunny
same thing with horses

Traditionally...a couple of little white lambs would really be cute! They aren't too hard to handle either when you put them on a lead rope. You could set them up with maybe a manger scene (if you can do that since it's school related).
Or... Dress them as elves with Santa and his sleigh (sleigh could be pulled by a tractor or a 4wheeler or a mule driven by Santa and the sleigh could be a trailer or a sleigh).
Or... you could use something else to dress up as elves or reindeer.
Good luck!

The animals I associate with Christmas are reindeer, polar bears and penguins. I guess just because they live in cold climates, ie the north pole, etc. Hope that helps!
