i know the basics...gloves, hats, aprons,-but im not too sure beyond that

It's a lot more than just clothing. Cleanliness, temperatures, equipment.

It needs strict hygiene and sanitation. What I would like to see made into law, is a small sink on the outside of the rest rooms. All of the restaurant help should have to wash their hands where the diners can see that hands are washed, and how thoroughly they're washed.
Also, that would make it unnecessary to use clean hands to push open doors that were opened by unwashed hands.
