Anything that is not coated in teflon! For years we were told that stuff was harmless, but now they are linking it to cancer and birth defects (a specific chemical in teflon- see article at http://www.washingtonpost.com/wp-dyn/content/article/2006/01/25/AR2006012502041.html).
Also, teflon is usually used to coat aluminum pans and aluminum is thought to be linked to alzheimers. If you can afford it, All Clad is awesome. It has a copper core which distributes heat evenly and is made of stainless steel. A cheaper option, but still nice, is the line of Cuisanart stainless steel pans. Overstock.com sometimes has some good deals.

Several years ago I replaced all my cookware with stainless steel. I love it!
Just make sure you go with 18/10. Anything else is just to thin.
I've seen 18/10 at Wal Mart on ocassion but if you should be near any outlet stores, that might be your best way to shop.
As stated in one of your other repsonses, stay away from teflon, it's just to dangerous for your health.
