I'd avoid the bones, spines, feet and innards (for preference) but apaprently they can be smoked or roasted and were traditionally regarded by Romany gypsies as something of a delicacy.
Apparently, if they're baked in clay, when the clay is removed the spines come away too...
If you're planning to try it though, I'd find someone who actually knows exactly what they're doing as wild hedgehogs can carry TB.

The traditional way is to wrap the 'Hog' in wet clay and bake it, yeah you can eat most of it but not the spines and bones..
try it with a nice Chianti..
