My niece has nextel for a service provider but her phone's not that great. I was going to get her a new phone but don't know how that works as far as whether she can use it with her plan? Are they just all kind of interchangeable?

OK here you go Nextel HAVE Sim cards and as long the phone is a nextel phone your niece can use it she just needs to take her Sim of her phone and get it in the new one and keep going and go back and forth when she likes.Nextel phones are iDEN and no other network phone for the exception of Boost will work with nextel and even those phones have to be unlocked to work so with the nextel working on boost.
The cheapest way to get her a phone will be eBay search for nextel phones ,a local pawn shop,and even some nextel stores could have used phones you just need to ask .

some phones work with a sim card (cingular, verizon, etc)...but others work on a network, (sprint, nextel)...if a phone works on a sim card they can be unlocked to work with other sim card companies. I would suggest staying with a sprint or nextel phone, because they work differently

No. It'd have to be a Nextel phone. Nextel phones are CMDA and do not have SIM cards, correct?
