Highlight the text and hit ctrl and U at the same time. It won't work if your email program is set for plain text; only html.

Something to consider:
Make sure the items you are highlighting to underline won't be misinterpreted as links in your message... You readers will get frustrated if they see text that * looks * like a link but isn't. You may be better off bolding the text or setting a different color instead. (If you're using Outlook or Outlook Express, or a web-based email program, you can use the application's built-in message formatting toolbar.)

Highlight the text you want underlined. Then click on the icon underline (usually a U).

You already have the answer, but a little tip on remembering shortcuts, is two ways, one is selecting anything any time, and right clicking, right clicking almost always, gives you options to what you might want to do next...this works almost ever where with just about anything...also in your file list, the letter underlined is the control + that letter is the shortcut.

See where it says 'Rich Text' at the end of the subject line, click on it, then you will get the icons like on MS Word. Then you can click on the U with an underline on it.

In the same area of the tool bar that has bold and italic icons there is also one for underscore.
Highlight the text you want underlined and then hit that underscore icon.

Using ctrl and U no longer works with the new yahoo email. the answer still eludes yahoo users.
