How do I start to customise a breyer?

I want to start my first customising project on a breyer model horse, has anyone got any good tips on remolding and the best paints to use?

An online friend of mine customizes breyer models.. I think she used to use acrylics but has moved on to oils for better colors. I don't know anything else about customizing other then that!
