Depends what part of Canada you are asking about. The French Canadians have some special traditions and special foods like tortierre served on Christmas Eve.

Most of the rest of Canada has similar traditions to the US. Turkey, stuffing, stockings, trees, lights (we are really big on lights), church, carolling, etc. all of the usual Victorian trappings of the season.
