Because different things can look the same? Christ that's like asking "Diarrhea looks like fudge, so why is it bad for you?"

cottage cheese is no longer just that - about 50 years ago it might have been made according to 'the old recipe' - as in someone tended it constantly, and it would be eaten after 3 days, tops ... modern cottage cheese is a developed solution of milk - to which is added some acid (vinegar) and rennet to create the clumps. Sour milk is just that - with enough fat content (as in whole milk) it will be natural 'buttermilk' and quite drinkable - but once past a certain point ( 2 days unrefrigerated) , or if contaminated by anything, be it bacteria or fungii, there will be nasty intestinal consequences.
Spoiled milk is NOT cottage cheese. Old yogourt keeps, old milk does not. Once opened any dairy ought to be consumed within 3-5 days, if you have a 'fridge that can keep it at 3-4 degrees above freezing you get to have that milk for a week or more, cottage cheese for 2 weeks, yogourt for 3 weeks. assuming you always use a clean spoon to transfer from the container. I f you eat out of the container, you have 2 days refrigerated life, tops. Bottom line - if it smells bad, don't eat it. Even so - it might not smell, but it could kill you anyway.
Bet ya wanna clean out the fridge right now, eh?
(old Canadian - just couldn't resist getting the EH? in there, eh?)
