I am installing a PC705 Variable Speed Pump Mixing Control

Simply put, I have 2 sensor bulbs that attach to the outside of the boiler pipe (one on the return line and one on the high temperature loop). I need a few feet of wire to reach the control panel.

The kit comes with sensor bulbs that have only 8 inches of wire. I need to know if copper wire is fine to use, or if I need a special wire. The instruction manual says nothing, other than to connect the wires to terminal 1 and 2.

Other brands of sensors, that I have installed give you too much wire.

Dont know your system but at a guess I would say you need a shielded cable if it connects to an electronic control of some sort, this stops it picking up stray spikes etc, check yor existing cable - it will probably have a foil around the conductors(but under the outer sheath)
