Which chocolate would melt faster, dark chocolate or milk chocolate? And why? My friends daughter is doing this for a science project and I want to sound like I know what I'm talking about when she asks me for help.

The softer of the two chocolates would melt faster (there is more water content). I believe that would be milk chocolate.

Make it an experiment. Get a regular Hershey Bar and a Dark Hersey Bar. See which one would melt the fastest in the same heat. Then make s'mores!

The percentage of fat content will make a difference. I would suggest trying several chocolates of different fat contents to see what that does.

And are we talking about melting on a stove or on a window sill?

If the heat source is the sun, darker will absorb more heat, but I still think the fat content is key.
