My nana actually just emailed me this recipe today-seems weird but after you read on it's kinda different-hope it's good

Taco Stuffed Pasta Shells
Ingredients:
16 jumbo pasta shells prepared according to package directions, rinsed and drained
1 pound of extra-lean ground beef
1 package Taco Seasoning Mix
1 package of cream cheese
1 cup shredded cheddar cheese
2 jars Taco sauce
1 jar of Salsa
Green onions sliced
Bag of Tortita Chips

Directions
PREHEAT oven to 350 degrees F. Cook beef in large skillet until brown; drain. Add seasoning mix and cream cheese; cook over low heat for 5 minutes. Spread taco sauce over the bottom of a baking dish.

Fill pasta shells with beef mixture; place shells in the baking dish, filled side up. Pour remaining taco sauce, then add Salsa over shells; top with green onion, and cheddar cheese.

Bake for 30 minutes. Sprinkle with additional green onions and top with broken Tortita Chips. Bake for an additional 10 minutes.

I forgot what they are called... u could put chicken or steak in them and put peppers and lettuce and things in them... those are great.. start off with tortilla chips and salsa, or a taco salad or something... Just be creative. u could go online and find like a menu with things for appetizers, meals and desserts...
it is so sweet u are doing something like that, i which my guy would do something like that! Good luck! :)

Agreed.
Who doesnt like enchiladas?
And of course, authentic Mexican rice.
You could also try flautas, chicken rolled into corn tortillas with pico de gallo salsa.
Besides, she should totally love whatever you do, because you made it just for her ^_^
