Every hobby can be productive even if its just the enjoyment it gives.

I know coin collecting is a lot of fun, I am not sure what you mean by productive. Holding a coin that Andrew Jackson may have had at the battle of New Orleans is a thrill. Having a 1861-O half dollar that could have been struck by either the U.S. government, the Louisiana state government or the Confederate states of America is a kick also. A coin as wages for a Roman warrior or a Coin that has the calligraphy hand done by an Emperor of China is also a thrill to own. To the model railroad people, your hobby is fun also.

Sewing is a very productive hobby. I have some very beautiful, original clothing that no one else has.

I found Knitting and Crocheting to be pretty productive. It keeps your hands busy while knitting something amazing. Its almost a lost talent.

Sewing, also, tends to be pretty productive but I don't know from personal experience.

Model Railroading, for it gives one a sense of accomplishment and satisfaction at having made something and getting to run trains.

Live Steam is pretty awesome too.
