Just get one gift. Don't get an ornament. get a candle, or movie tix or something else. A token of appreciation is the point for teacher gifts, not religious celebration.

You can get her a nice book or maybe a photo album. Anyone can use one of those.
BTW, I have two Jewish friends who both put up trees.
Actually they love the Christmas holiday, so you never know...
