The Netherlands' official capital city is Amsterdam, though the seat of government, the home of the monarchy, and most foreign embassies are in Den Haag.
I thought that a capital city was the city of a country's administration. How come then that Den Haag is not the capital in the Netherlands?

Amsterdam is not where te goverment stelt or where the queen lives.
Den Heage is the residentscity.
In the time that the frence rule on the netherlands thy head the gouverment sateld in Amsterdam. So Amsterdam became the capital of The Netherlands.
around 1813 the frence left The Netherlands. And in 1815 King Willem I came to The Netherlands. And that why Amsterdam still is the capital of The Netherlands.
The gouverment went back to Den Heage where thy seat before.

Amsterdam is the capital of The Netherlands
The Netherlands is divided in 12 areas called 'provincies'.
One of those 'provincies' is called Zuid-Holland (a part/region in the south-west of The Netherlands). The capital of Zuid-Holland is Den Haag.

Note: Rotterdam also lies in the 'provincie' Zuid-Holland. This city is bigger of size, and also financially of more importance for the region, because of their harbour. Albeit, Den Haag is the capital of Zuid-Holland.

Amsterdam is the capital. The administrative capital can be somewhere completely different and may or may not include things like the seat of the monarchy and embassies and such like (for example, Windsor Castle is not in London)
