Usually, the bartender receives 2% of gross sales at your tables. It's assumed that you'll receive 15% (or so), so you'll have 13% left.

Lol, superb eating buffet? Is that an oxymoron? Tip 10% of your invoice if your waitress has to bus your plates, deliver you beverages/rolls, etc. She nonetheless has to freshen up once you besides.
