That varies greatly, depending on the details of the technology, crystal structure, materials, and so on. The reference gives a good overview of this. A single semiconductor energy gap responds to a specific wavelength of light. Cascading a series of materials, each responding to a different set of wavelengths, has the prospect of highest efficiency. Of course, it also has the highest cost.

Probably cells could be developed that do use UV or IR but photovoltaic use light photons.
