In Halo 1 you get an alternate cutscene in the ending. Normally, it shows some Flood warrior forms heading towards the crashed Pillar of Autumn as explosions are going off on the ship.
When you beat the game on Legendary, it doesn't show that scene.. instead it shows Marines battling Elites, and they stop fighting to look at the explosions. Sargeant Johnson says, "well.. looks like this is it.. come 'n get it" and he and the Elite drop their weapons and hug each other.
On Halo 2, a lot of the cutscenes have alternate dialogs depending upon what difficulty your on, and sometimes just a random factor. Like on Zanzibar, after the Scarab wrecks the Pelican, Cortana wakes you up after the crash.. in some versions, she says "hey chief.. you ok?" sometimes she'll say "'tap' 'tap' 'tap' Hey.. you awake in there?"
Beating Halo 2 in Legendary doesn't do anything different to the ending, and just gives you bragging rights.
