There are 2 areas of folklore that I know of involving deer. First, it is the sacred animal under the protection of the goddess Diana the Huntress. Usually, the hunting of it is punished personally by her. White is a symbol of sovereignty or lordship. It was long believed that there was a lord over each species of animal, either golden or white. Each lord protected its own species.
Second, among Native American cultures, it is believed that the white animal of any type of animal is the personification of the species manitou, or spirit that is in all things. To witness the passage of a white animal, especially if it is your spirit guide is considered a thing of great empowerment, including white animals seen in dreams.
Being witness to animals in dreams is a very strong dream image, though it may not occur very often.

the only white deer you will find are isolated in a military compound in new york state.

i never saw one.. but then again i do live in Georgia.. and if there was one around here all the locals would be hunting the poor thing just to hang its head in the living room
