Coffee grounds are excellent for composting. You are correct about the fats & meats. I usually also put in my old shredded mail. (That way I know for certain that no one is going to steal my identity by going through my garbage.) However, if you are trying to be completely organic, you might not want to do this, as the ink may contain unwanted chemicals.
When adding yard waste, you don't want to add weeds, as some can germanate and grow in the compost.
If you have pets, you don't want to put any of their excrement into the pile. This can be done if you are ONLY using the compost for flowers & shrub plants, NOT for plants grown for food.
