I don't say "Merry Christmas" because I don't celebrate Christmas. I do celebrate Yule, however because I follow Asatru (Northern Euro Paganism). So I usually say "Happy Yule" or depending on who I'm greeting I may say "Happy Holidays" if I don't feel like explaining Yule at the time. Also, I don't hold it against anyone wishing me a Merry Xmas either. If someone wishes me Merry Xmas, I know it's a friendly greeting and not an attack on my religion.
To refer to the part of your question about people changing things, I think you're just seeing the effect of having a growing diversity. The country is not populated exclusively by Christmas celebrating Christians. There are a multitude of different clutures and religions, many of which have holidays celebrated around the solstice time. Because of that, many people offer up a greeting of "Happy Holidays" or "Seasons Greetings" when they don't know the background of whomever they are addressing or when addressing a wide audience. It's a matter of politeness and sensitivity. Also stores, for example are now referring to sales as "holiday" sales etc. Their reasoning for this is valid. They want to include as wide an audience as possible as customers. Whether you're Jewish, pagan, atheist or christian, your money is just as good.
With all that said. I don't think there is anything wrong with you saying Merry Christmas. If that is what you celebrate, good for you. I hope you have a wonderful holiday season (which I consider to be everything from Thanksgiving thru New Years).

I believe it's about cultural awareness.
Yes you may celebrate Christmas, but maybe one of your friends celebrates Hanukkah, you say Happy Hanukkah to them because that's what they're celebrating, it doesn't have to do with you.
Why would you wish someone a Merry Christmas if they don't celebrate that? Why would someone tell you Happy Kwanza?
That's why some people just wish people Happy Holidays...and it shouldn't matter what you celebrate...because in the end you DO celebrate what you want and no one is trying to change that.

Christmas *is* a Holiday, and so is New Year's. If it's okay to say "Merry Christmas and Happy New Year," it shouldn't be wrong to say "Happy Holidays." Either way, you're still wishing people to enjoy both holidays.
I celebrate Christmas myself, but I try not to presume on other people celebrating it either. It's just respectful of their celebrations, as I would want them to be respectful of mine.

I always say Merry Christmas and I never write it with an X. I do say Happy Hanukkah to the several Jewish friends I have, but most of the time it is Merry Christmas whether people like it or not. (I am stubborn that way)

I have always said, and will continue to say Merry Christmas. So far I've never had anyone complain when I say this to them and as a general rule majority of people where I live say this too, so really for me it's no big deal to continue on. And if someone doesn't like it, oh well, they'll just have to put up with me saying it anyway!!!

People also thought the world was flat for thousands of years, but the evidence finally made it evident it is global... globe-all.
Perhaps you should reconsider your religion if it's pro Christmas, for Christmas has more lies and hypocrisy than other holidays.

No-one's trying to change your traditions or phrases--you can say whatever you want.
A large number of people have decided that they themselves would prefer to reflect the meaning of Xmas (Good will to ALL) than to stubbornly insist on alienating anyone who doesn't think the way they do.
