Perhaps immigration may be an interesting possibility?
Have you done much travelling? Maybe you could take an extended vacation and do some sight seeing?
Are you interested in opening a shop or a pub or maybe selling things online?
If you're open to a really radical change, you could consider fostering children, on a short or long term basis :) Or fostering animals!
Have you got any ambitions that you might like to fulfil, such as writing a novel?

You say "hubby made redundant" implying he is no longer useful
or in the picture and yet you say "We" want do do something different.....
Sell the house and move somewhere new & exciting..
