What we consider taste is actuall smell and taste. When you have a cold, mucous clogs up the olfactory epithelium (the part of the nose that has all those receptors for odorants) so your sense of smell gets impaired and food doesn't "taste" as good.

Your sense of smell goes because your nasal passages are congested and filled with mucous. Your sense of taste goes because a very large part of taste is actually smell.
