The state of Texas is vast, and you would be traveling THROUGH other States as you traveled to California. You need to get a map of the U.S. preferably a road atlas. There you could find the routes through Texas and other States.
The southern route would take you through New Mexico, and Arizona. The Northern route, if you're going to Northern California from Northern Texas, could take you through other states...Colorado, Utah and Nevada.
California runs along roughly 1,000 miles of the West coast of the U.S.
You can use a route/trip planner. Give the beginning and ending of your planned trip. Try requesting several different destinations in the State of California and you will see what I mean.

I guess it would depend on how you went.
If you flew, then none.
It you took a rounabout way, then as many states as you wanted to pass through
Going a direct route, Arizona and New Mexico.

Seven is the minimum; there are ten such routes. To prove, consider the eastbound route. 1. WA, OR, or CA is required. (HI and AK don't touch anything.) 2. ID, UT, or AZ is required. (NV just adds 1 unnecessarily) 3. MT, WY, CO, or NM is required. 4. ND, SD, NE, KS, OK, or TX is required. 5. MN, IA, MO, AR, or LA is required. 6. KY or TN is required. Thus no MN/IA/LA in step 5, no ND/SD in step 4, no MT in step 3. 7. VA or NC is required. So these are the only solutions: |--: {WA,OR}-ID-NE-MO-KY-VA |--: CA-AZ-NM-{OK|TX}-MO-KY-VA |--: CA-AZ-NM-{OK|TX}-MO-TN-{VA/NC} |--: CA-AZ-NM-TX-AR-TN-{VA/NC} Eight routes allow you to take a path where your latitude always decreases or increases. (The two routes ending MO-TN-VA do not.)
