They have amazing physiological and anatomical adaptations which allow them to do this. They can store water so they can go for longer without becoming dehydrated. They can raise their upper critical temperature so that they can put up with the heat. They are also fast and have specially adapted feet so that they don't sink into the sand. And they are strong and can carry fairly heavy loads on their back. Cooooool creatures. But they spit....
