Denim, but jeans can also be made of corduroy.
Both are cotton. Denim is twill-woven as remarked above, corduroy is a "cotton-filling pile fabric with lengthwise cords or ridges."
Jean in general means denim or any "sturdy twilled fabric, usually of cotton."
Jeans, though, means "pants made of jean, denim, or another durable fabric."
So a pair of jeans may be made of jean (a kind of which is denim, the most common) or several other cotton fabrics.

Depends on the jean.
All jeans are cotton (the denim itself) or a cotton blend. But some jeans have a higher percentage of cotton than others. If you looked at the tag on a traditional pair of jeans, it would be 100% cotton (denim) while a trendy pair of stretch jeans might be only 60% cotton and 40% Spandex, and another pair of fashion jeans might be 50% cotton, 25% Spandex, and 25% Polyester. Cotton, Spandex, Polyester, Nylon, and Rayon can all be found in different kinds of jeans.
The only way to know what your jeans are made out of is to look at the inside tag.
